Healthy Enchilada Sauce

So as I stated yesterday eating processed foods is off our menu in 2013. I had chicken enchilada pasta on the menu for this week so I got a little nervous. But after some searching on the Internet I found a DIY recipe for Enchilada Sauce

Hello healthy homemade goodness
(This is by far 100x's better than any can version I have ever tried!)

This recipe makes about 2 cups


2 Tbsp Olive Oil
2 Tbsp Flour
2 Tbsp Chili Powder
2 cups of water
3 oz tomato paste
1/2 tsp of cumin
1/2 tsp of garlic powder
1/4 tsp of cayenne pepper
salt to taste ( I used none cause we don't cook with salt)
STEP 1: Add the vegetable oil, flour, and chili powder to a medium pot. Turn the heat on to medium and whisk the ingredients together. Continue to whisk as the mixture begins to bubble. Whisk and cook the mixture for one minute once it begins bubbling. 

STEP 2: After one minute, whisk in the water, tomato paste, cumin, garlic powder, and cayenne pepper until smooth. Allow the sauce to come up to a simmer. Once it reaches a simmer it will begin to thicken slightly.

STEP 3: Starting with a 1/2 teaspoon, add salt to taste. I used about 3/4 teaspoon total. The sauce is now ready to use!

  3. I am SO glad you posted this! My husband is gluten-intolerant and I have a hard time finding enchilada sauce that doesn't have "modified food starch" in it (which has gluten), so I will definitely be turning to this recipe and using gluten-free flour. Thanks!
