So yes I have been so out of blogging juice lately....
I haven't become super lame I promise, its actually the opposite!
So much is everyday that I feel like I come home, go to sleep and then start again.
I have been reading blogs but I miss the interaction I get

No, his mother would dis-own him and honestly neither of us can think of anything we would want on our bodies forever even if our parents wouldn't take us out of their will haha.

Basil Spring Rolls-- From Our Kitchen to Yours :)

This recipe was such a hit! 
I made some stir fry with a new sauce I put together and it was a letdown but these spring rolls made up for it completely! I have a ton of extra wrappers, cabbage and basil left over so I am going to make them again next week with some chicken or shrimp in them :)


Spicy Peanut Sauce 
1 teaspoon onion powder
2 garlic cloves minced
1.5 tablespoon red pepper flakes
2 tablespoons of EVOO
1/4 cup plus 2 tablespoons of water
2 tbsp of crunchy peanut butter
1 tbsp soy sauce
1 tsp sugar

Add everything to a pot and cook for about 5 minutes. 

Basil Spring Rolls
Spring Roll Wrappers
Lettuce (chopped)
Napa Cabbage (chopped)
Basil
Shredded Carrots
Vermicelli Rice Noodles
Spicy Peanut Sauce

1. Soak the wrappers for about 10 -15 seconds or as directed on package until they are fold able
2. Layer lettuce, basil, carrots, peanut sauce, rice noodles, cabbage in the middle of the wrapper
3.  Roll the Spring Roll up like a burrito
4. Freaking enjoy the nommmnesss :)

Weekend Shenanigans!

This weekend was all about Andrew and I and some major relaxation!
We had that planned for last weekend but you can read about how that turned out here!

On Friday we finished out working Kids Week at our church and I feel so blessed to be able to work in that way with the kids of the Triangle. I honestly believe they had a blast and when their parents came to spend the day with them Friday they were so excited to show and teach them all we had learned all week!

On Saturday I was woken up by this guy ( aka our needy one)!


I spend my day getting brunch with my sweet friend Dakota and her precious baby girl Harper. I can't believe this sweet baby is already over a month old!


Andrew took my to dinner Saturday night to celebrate the end of the school year. We went to Sitti and I had the most amazing cocktail! Our dinner was fab but what I should rave about is their appatizers! Andrew and I can't wait to go back and just order them all for our dinner!
(ps.-- it was called "When in doubt, pinkies out")

Sunday was both of our pupster's birthdays! Bently is 4 and Cooper is 2!
We took them on birthday walks and spent the day after church snuggling with them :)
