Want to know my favorite treat growing up... Yum Chocolate Chip Banana Nut Bread!
Want to know what major ingredient is in there... gluten...booo
So what was I to do this week when there were 3 overly ripe bananas sitting on my counter?
The answer is make my own gluten free version and alas the deliciousness was born!
Ingredients:
2 cups gluten free flour ( I prefer Bobs Mill)
1 tsp baking soda
1/4 teaspoon salt
3 eggs
3 ripe mashed bananas
1 cup sugar
1/2 cup applesauce
1/3 cup coconut oil
1 tsp vanilla extract
lots of walnuts and chocolate chips
(cause this is what makes it extra amazing)
Directions:
Heat oven to 350
Mix flour, baking soda and salt in one bowl and all other ingredients in a smaller bowl.
Combine the wet ingredients with the dry ingredients
Bake in two load pans for about 50 minutes
Cool and enjoy the heaven of all breads :)
